So this was inspired by Deliciously Ella, and they came out incredibly tasty!

Grab these ingredients and go!



150g sweetcorn
90g chickpeas
1/2 chopped onion
5 tbsp wholemeal flour
Mixed herbs & Chilli Powder
2 tbsp olive oil
20 ml water
1/2 lime
1 garlic clove
1/2 Grated brocolli stem
1 grated carrot

Serves: 3 people


1. Blitz together all ingredients in a food processor and blend until a chunky mixture forms.
2. Heat a tbsp of olive oil over a pan and scoop in spoonfuls of the sweetcorn mixture. Cook on medium heat for 5 mins on each side until fritters are golden brown.
3. Make guacamole (see previous post for recipe)
4. Serve fritters and enjoy! I served this with some salad and 1 slice of sourdough toast and it came out amaaaazing.
