This incredibly tasty dinner is the perfect way to end a very busy day!  I use wholemeal wraps instead of crispy tacos and it was delicious!!



1 red onion chopped finely
1 red pepper chopped finely
1 yellow pepper chopped finely
Handful of spinach
400g organic chopped tomatoes
400g kidney beans
Salt & Pepper
Mixed Herbs
To serve:
Bulgar wheat
Plain yoghurt
Taco shells or wholemeal wraps
Fresh coriander


1. Place all the veggies: onions & peppers into a large pan and cook until soft.
2. Add the tinned tomatoes and kidney beans and rest of the ingredients
3. Bring the pan to the boil then reduce the temperature and let it simmer for 20 mins.
4. Once thick, serve into wholemeal wraps/ taco shells and serve with toppings.
