Now who can say that plant based foods are boring ?!
Plant – based Vegan French toast topped with mixed berries, pumpkin seeds and a drizzle of maple
I mostly eat plant based so this includes whole grains, fruit, veggies, tubers and legumes. For me eating plant based is all about COLOUR and variety, and of course making it all taste AMAZING whilst being good for you 🙂


1 ripe banana
50ml almond milk (or any plant based milk)
2 wholegrain pieces of bread
Pinch of vanilla
Pinch of cinnamon
Mixed berries
Pumpkin seeds
1/2 tsp maple

1. Mix in a bowl the banana, almond milk, vanilla & cinnamon until smooth
2. Dip the slice of bread into the mixture on both sides and fry on both sides for a few mins until crispy
3. Top with berries pumpkin seeds and a drizzle of maple
