Vegetable Thai Curry with Brown rice.

Hands down one of the BEST dishes I’ve made!
I’ve been trying to perfect a Thai for aaaages and I’ve finally nailed it! And it only takes 15 mins to make!

 

Ingredients

Small crown of broccoli chopped

Red & green peppers

1 onion chopped

1 tbsp green curry paste

1 can coconut milk

15ml sesame oil

2 lime leaves

1 tsp organic cane sugar (diluted in hot water)

Method

1. Stir fry curry paste with sesame oil and add the coconut milk.

2. Add the lime leaves and sugar and stir until fully combines. Taste it and add more curry paste if necessary

3. Add all the vegetables and stir it in.

4. Serve with brown rice
